1lb(½kg)fresh green beans - washed and cut into pieces
½ a red onion - thinly sliced
1 ½cupscherry tomatoes - halved
½cupfresh basil - finely chopped
2cloves of garlic - minced
1 ½tbspolive oil
Juice of 1 lemon
Salt and pepper to taste
Instructions
Bring a pot of water to a boil. Blanch green beans in water for about 3 minutes. Drain and transfer to an ice bath for another 2-3 minutes. Drain and place green beans in a large bowl.
