Instructions
Preheat oven to 375. Mist a muffin pan with cooking spray.
In a medium sized mixing bowl, whisk together the flours, baking powder, baking soda, salt, and raisins.
In another small bowl, whisk together the buttermilk, melted butter, egg, and honey.
Gently combine the wet and dry ingredients, stirring just until combined as over-stirring will cause the muffins to have a tough texture).
Spoon the stiff batter into the muffin pan, filling the cups about 3/4 cup full.
Bake the muffins for about 20 minutes, or until a toothpick inserted in the center comes out clean.
Let muffins cool in pan for about 5 minutes, then transfer to a wire cooling rack.
