A good friend of mine recently told me about this delicious looking Roasted Eggplant and Goat Cheese Salad Recipe that she found on Pinterest, and once I saw it, I knew I HAD to try it!!

I revamped the version that was posted on thekitchn in order to make it a better option for a Salad Recipe. It was unbelievably good!! The flavors and textures all combined so well together to create the best Roasted Eggplant recipe I’ve ever had.

My version of this eggplant salad recipe has 10g of heart healthy fats per serving. Woo hoo!!

This roasted eggplant salad would make a fantastic, low calorie summer salad recipe to serve at a picnic or potluck. But if you feel like it’s just too good to share, make it for yourself as a healthy vegetarian lunch recipe.

Pizza is just one of those foods that I could eat every single day for the rest of my life. I absolutely adore it in all forms, and am always willing to try just about any new pizza recipes that I find. A long time ago, I came across Flatout Flatbreads, and have been using them to make personal sized pizzas very often.

Inspired by one of my favorite French recipes, I created this incredibly delicious Lavender Chicken Recipe with Asparagus. It’s so fresh and light, and makes the perfect summer or spring dinner idea. The delicate lavender flavor is absolutely divine and not at all overpowering. I also love the idea of using this as an Easter brunch or dinner recipe since the beautiful lavender flowers make it as aesthetically pleasing as it does tasty.

These Blueberry Oatmeal Muffins are a healthier and lighter version of a basic, traditional Blueberry Muffin Recipe. Still moist and delicious.

I like to make a big batch and freeze some so I’ll have a quick and healthy breakfast on hand whenever I’m feeling too tired (or lazy) to cook. They are also great to give to my toddler for a tasty and healthy breakfast on the go.

I’ve seen a lot of variations of these blueberry muffins with nuts or icing added, but in order to keep it diet friendly, I stuck to the basics. Plus, I often enjoy a simple muffin without too many ingredients. Occasionally, I’ll add a tablespoon of flaxseed Powder for some added health benefits.

I have always been a big fan of Middle Eastern food recipes, as they are so immensely flavorful and tend to be loaded with healthy ingredients. A good friend of mine recently prepared this incredible Moroccan Spiced Chicken Recipe with Prunes that was to die for. I loved it so much, I worked hard at creating my own version that’s just as fantastic as hers and yet is still Weight Watchers friendly.

I stumbled across the fantastic Mediterranean Peppers and Olives Salad Recipe on Kalyn’s Kitchen a few weeks ago and finally got around to giving it a try this past weekend. I made a few changes to make it more diet friendly (and more flavorful).

And it was out of this world!!

This is an incredibly delicious salad that is so full of flavor, texture and color, and it’s as aesthetically pleasing as it is healthy. Loaded with all the wonderful Mediterranean food fats that are good for your heart, this healthy salad recipe is worth every Point of the 5 Points it has per serving.

Because this salad is so rich in flavor, I’d recommend pairing it with a light fish or chicken entree. Or serve it over some quinoa for a filling and amazing vegetarian recipe.
