With the summer season kicking off, asparagus is plentiful at the markets, and is one of my favorite veggies. So I’m always on the lookout for delicious new Weight Watchers Asparagus Recipes to try, since I eat a lot of asparagus and love to shake up my plate with some new and unique ideas.

This Balsamic Tomato Asparagus was off the charts AMAZING. The mild asparagus was a perfect palate for the creamy, tangy goat cheese and tart, acidic tomatoes. And at just 3 Points for half the entire dish, this asparagus makes a great Weight Watchers side dish recipe that’s as delicious as it is beautiful.

My husband loved it just as much as I did. I also loved how ridiculously easy it was to make. This recipe would also be fantastic using grilled asparagus too, so if you’ve got that grill heated up, toss on some asparagus and make this dish, asap!

Growing up, Swedish meatballs were a staple in my house. So every time I eat them, I think of classic, home cooking. I adore Swedish meatballs…really, what’s not to love about moist and juicy meatballs smothered in a creamy, beefy sauce and usually served over yummy egg noodles? Well, traditional Swedish meatballs sure are tasty, but they are definitely not so diet friendly.

This Thai Coconut Curry Basil Shrimp Recipe is fresh, light, flavorful and satisfying, and makes a great Weight Watchers summer dinner recipe.

The sweet, peppery basil complements the spicy curry perfectly, and the polenta makes a wonderful vehicle for all these fabulous flavors. This traditional Thai shrimp recipe is usually served over rice, but I like the lighter taste of the polenta.

Each very nicely sized serving is just 6 Points, and is packed with delicious flavor. Pair it with some fresh cucumber salad, and you’ve got yourself a wonderful, healthier alternative to Thai takeout that is much more Weight Watchers friendly.

I do believe I have found one of my new favorite Recipes — this incredibly delicious Buffalo Chicken Chili Recipe. Oh my GOD, it is is so good! As I’ve said many times before, I am a huge fan of buffalo chicken anything, so when I found the original version of this recipe at Closet Cooking, I was psyched to re-vamp it and make it a more diet friendly dish.

Oh, the poor turnip. It’s commonly ignored at the supermarket, while shoppers fill up their cart with all the more popular produce, and the turnip just sits there, usually beside it’s brother – the beet, going mostly unnoticed. Until now, that is. After getting some beautiful fresh turnips in my Farm Fresh to You box recently, I was eager to give the turnip a try.

I came across the original version of this Sweet and Salty Roasted Chickpeas Recipe at the Cupcake Project and was SO excited to try it!

These turned out to be a really yummy treat, and a healthy snack recipe at that. Each serving is 3 Points, and the flavors are just perfect for that late night snack you need while catching up on your DVR shows and can’t decide between a sweet snack or a salty snack.

These roasted chickpeas give you the best of both worlds with the added bonus of fiber and protein. The fiber also helps to make them filling. I think the next time I make these, I might try drizzling them with a tbsp of melted Brummel & Brown Yogurt Spread first, instead of lightly misting them with olive oil. Just the idea of butter, brown sugar, and cinnamon on anything makes me drool.

These are definitely delicious and healthy snacks that the whole family can enjoy.
