For as long as I can remember, I have adored dumplings.

There is just something about chewy, lumpy balls of dough that get me all excited. This might also explain my infatuation with cookie dough. But given that dumplings are flour based, they can add up to some serious calories and Weight Watchers Points, so I’ve tried to avoid them.

But this Crock Pot Chicken Stew with Cornmeal Dumplings puts a lighter and healthier spin on traditional dumpling recipes. Plus it gave me an opportunity to utilize some fresh herbs from my husband’s garden.

Each very nicely sized serving is just 6 Points each and is very satisfying. The dumplings came out perfectly and my family and I devoured this dish. It’s definitely a Weight Watchers Crock Pot recipe that I’ll be making again and again.

It simply looked too good not to try, and I happened to have a lot of extra mushrooms in the fridge, so despite the 96 degree temperature outside, I got to work re-working her recipe into something more Weight Watchers friendly.

It’s also a great way to get in a lot of servings of fruit and vegetables. It’s colorful, fresh, and very satisfying. Each serving has just 3 Points, making it a great idea for a healthy Weight Watchers dinner recipe.

This is also a dish I like to make on days when I feel the need to eat a LOT. Because it’s such a low-calorie, healthy recipe, I can really go overboard with this and not feel an ounce of guilt. There are even days when I’ve made my Pineapple Chicken Stir Fry Recipe and have eaten the whole thing! Yes, that’s right…all 4 servings. I LOVE it.

Also, I’m obsessed with Frank’s Red Hot Sauce, so I use a lot of it in my version, but you can use as much or as little as you like.

Kohlrabi is a vegetable from the cabbage family and basically tastes like a combination of cabbage and broccoli.

If you are up to putting in some elbow grease in the kitchen and making an incredibly delicious and healthy pasta casserole recipe, well then this Butternut Squash and Spinach Pasta Casserole Recipe with Caramelized Onions is for you.

Loaded with delicious veggies and a fabulous creamy bechamel sauce, each serving is just 5 Points. It does require lots of separate pots and pans for cooking various components of the casserole, but it is oh so worth it.

The garlic sauteed spinach, the onions caramelized in butter, and the roasted butternut squash all combine perfectly in this vegetarian pasta casserole recipe. I used fresh, whole milk buffalo mozzarella to top it with and it was amazing! It’s a big recipe, so we had lots of leftovers, and it re-heated very nicely as well.

This is definitely a Weight Watchers casserole recipe that will impress. And though I made it in the middle of a high temp summer, I’d ideally make this tomato-free pasta recipe in the fall, as the sage and nutmeg give it a fall-like flavor.

One evening, I was in need of a quick side dish recipe that was low in Weight Watchers Points yet still a flavorful (and pretty!) dish. I need to eat light to keep my Weight Watchers Points low, but I was craving some red meat. I remembered that I had some leftover roast beef lunch meat in the fridge and I decided to put it to use in a Roast Beef Salad Recipe that I had at a restaurant in NY.

Of course the Roast Beef Salad I had there was a lot higher in calories, so I slimmed down the restaurant version to make it more Weight Watchers friendly.

Using the butter lettuce instead of the Romaine Lettuce I always use was definitely a nice change too. And the mustard balsamic vinaigrette dressing complemented the roast beef and the blue cheese perfectly. It was amazingly delicious.

And at just 5 Points per salad, I was able to indulge in a tasty dessert afterward. This easy salad recipe is definitely a keeper!
