Kale, Strawberry and Avocado Salad

Spring is just around the corner, and I’m eager to welcome in the warm sunshine! And one of my favorite ways to celebrate spring is with fresh, bright salads. This Kale, Strawberry and Avocado Salad is just the ticket. It is an excellent dish for when you want to pack a TON of nutrition into one serving, as it’s loaded with heart healthy fats, vitamins and minerals, and important dietary fiber. This sweet and salty salad would be a perfect Weight Watchers Easter Brunch Recipe, if you are scouting out some good ideas. St. Patrick’s Day is almost here, and I’ve been n the kitchen experimenting with a few new recipes to celebrate the holiday with. One of which are these incredible Irish Soda Bread Muffins. There’s something about pot roasts that just take me back to my childhood and coming in from a chilly fall day to the aroma of a juicy, tender roast in the oven. As a Weight Watchers member, I try to avoid red meat most of the time due to it being higher in Points and higher in cholesterol.

Polish Chicken Meatball Patties

Get a taste of old-world style in these delicious Polish Chicken Meatball Patties. So tender and juicy, they are wonderfully seasoned and are sure to make any Polish mother proud. Made from lean ground chicken breast, they are a lot lighter than their traditional counterparts. Each 4 patty serving will cost you just 5 Points, which is pretty great. Sweet Balsamic Chicken

Forgot to plan dinner tonight? If so, this easy Sweet Balsamic Chicken Recipe is the way to go! It’s a super easy chicken dish with ingredients that you most likely have on hand. It can be prepared quickly and delivers a wonderfully moist, tender chicken that is incredibly flavorful. The sweetness of the vanilla and orange are a wonderful contrast to the rich tang of the balsamic. I like to add in some chopped vegetables with the chicken and the sauce before cooking, and then serve over some whole wheat couscous….it’s AMAZING, and a great way to give those veggie servings some serious flavor.

Nothing quite says comfort food like mac and cheese. The combination of carbs and cheese is just absolutely irresistible to me, and I cannot deny it to myself. So to keep myself from indulging on the high fat restaurant versions of mac and cheese, I created this Three Cheese Baked Mac and Cheese Recipe that is every bit as decadent as a gourmet version, but for a lot less Points.

This incredibly easy Coconut Garlic Chicken Recipe has become my new, favorite go-to chicken recipe when I need a fast and simple Weight Watchers Dinner that tastes unbelievably delicious, while only using a handful of ingredients.

A friend of mine, who is Filipino and an amazing cook, told me about this chicken dish that his mom used to make for him that made his mouth water every time he thought about it. Of course, I harassed him for the recipe and made him call his mom to find out what was in it. She didn’t give me an exact recipe but listed the ingredients.

When reviewing just these few simple ingredients, I was admittedly skeptical that this was going to be such a “mouth-watering” dish as my friend had touted. But I played around with the ingredients, and after a few attempts, the end result was this UNBELIEVABLY delicious chicken that was not only a healthy and low Points recipe at just 5 Points per serving, but it was one of the quickest and easiest chicken recipes I’ve ever made.

You get a mildly sweet, coconut flavor with a hint of acidity and a savory garlic taste. Total perfection. I served it over some steamed brown rice, which soaked up that extra sauce, and some roasted asparagus for one seriously tasty dinner. I will absolutely be making this dish again and again!

I love pasta dinner nights at home, because that usually means I’m going to have fun finding some new way to add more vegetables to my pasta dish in order to bulk it up and use less carb-heavy noodles. This Spinach, Mushroom, and Caramelized Onion Pasta Recipe uses caramelized onions, which adds a mildly sweet and smoky flavor, and the spinach and mushrooms contributes a wonderful earthiness.
